Kale & Crispy Bacon Salad {Paleo}

This is one of the many things I can thank my mom for. She made this for lunch recently when she was over and it was so good!

We used turkey bacon and of course you can omit it altogether if you are vegan…or just out of bacon. And then call it Kale & Crispy Baconless Salad 😀

Here’s what you need. Well, plus a tomato. I’m new to this posting recipes things, can you tell?:

Kale & Crispy Bacon Salad

  • 4 strips of bacon
  • 1 bunch kale, tough ribs and stems removed
  • 2 Tbsp fresh organic orange juice
  • 2 Tbsp fresh organic lemon juice
  • Salt and pepper
  • 1 medium organic tomato, chopped
  • 2 organic green onions, finely chopped
  • 2 Tbsp organic olive oil

Cook bacon as directed on package until nice and crispy. Let cool and chop into small pieces.

Chop kale.

Add orange juice, lemon juice and 1/2 tsp salt. Using your hands, massage juices and salt into kale. That’s right, massage your food….nevermind that you haven’t had a massage since back in aught two and just massage that kale! Let stand 5 minutes.

Add tomato, green onion, olive oil, bacon and freshly ground black pepper. Toss until well combined.

Eat it up right nice!
